The last thing we want to do in this sweltering summer heat? Turn on the oven. That's why ceviche (aka raw fish soaked in a citrus marinade) might just be our new favorite summer appetizer. Best of all, it's surprisingly easy to make at home.
What You Need:
- 1 pound halibut
- 1 cup tomatoes, diced
- 1 red onion, diced
- 1 serrano pepper, seeded and diced
- ¼ cup lemon juice
- ¼ cup lime juice
- Hot sauce
- Salt
- Pepper
- ½ avocado, sliced
- Cilantro, for garnish
Step 1: Cut the halibut into ½-inch cubes and place in a glass bowl.
Step 2: Combine the tomatoes, onion, serrano pepper, lemon juice and lime juice with the halibut. Add hot sauce, salt and pepper to taste.
Step 3: Refrigerate covered for 3 hours, stirring every hour. Garnish with avocado slices and cilantro and serve cold with plenty of tortilla chips.
